Remember when a pub's vinous offering amounted to ‘white or red’? Those days are long gone – Adam Handling's latest venture provides more than 18 wines by the glass, ranging from Taittinger Prélude NV to Silver Oak Cabernet Sauvignon (courtesy of Coravin). The superstar chef, meanwhile, has chosen a gorgeous, 400-year-old Grade II listed building in rural Cornwall as the setting for The Tartan Fox; it promises “sustainable British food” served in a warm, informal atmosphere. There is a plant-based menu for vegetarian and vegan foodies, although our money is on the black pudding bon bons, followed by grilled hake, white beans and chicken butter sauce.  Cornwall's pub scene will never be the same again.

Henri

Hotel dining used to be such an uninspiring affair: bland, over-priced generic dishes served in a stuffy, formalised setting. Yet Henri promises to knock our socks off with its imaginative take on Parisian classics, located inside the très chic Henrietta Experimental hotel in Covent Garden. Gastronomic duties will be handled by Jackson Boxer of Brunswick House fame, while the wine list offers an eclectic mix of wines by the glass – everything from tangy Verdejo to oak-aged Santenay. This ode to all-day dining and impeccable Parisian style is open now.

Tollington's

Much loved by the residents of Finsbury Park, Tollington's fish and chip bar is being given a Spanish makeover by restaurateurs Ed McIlroy and Jamie Allan. Due to open at the end of June, the new incarnation will merge the  informal atmosphere of  a quintessential British chippie with the flair of a San Sebastian tapas bar. The menu, too, will expand beyond fried cod to encompass charcuterie and meat dishes, served alongside a concise list of Spanish drops, including (we hope) Basque favourite Txakoli. Expect the queue to extend around the block.
